Not sure what to eat for dinner tonight, why not try a healthy salad?


 Growing up I wasn’t too fond of eating salad because of the thought of eating “grass” as a true African would put it, just didn’t sound right to me. As I got older, I realized that I could actually remix my own salad and make it however I want. If you don’t like to freestyle, there are endless of tasty recipes online. Being home for almost five months, I’ve started incorporating salads to my diet. Few people asked how I make my salad on Instagram so I thought ‘why not do a blog post about it?”  Today I’m sharing one of my favorite salads- it’s light, filling, healthy and tasty!!

Ingredients

  • Kale
  • Cranberry
  • Pecan Nuts
  • Gala Apple
  • Goat Cheese
  • Salad Dressing

I typically make salads with either baby spinach or spring mix because it just taste better to me. I like this Kale salad because of the added cranberry, it balances the taste of the kale. In fact, this is one of the rarest occasions that you’d fine me eating cranberries. The kale salad is also the fastest salad that I make- it literally takes less than 3 mins.

Instructions

  1. add kale to plate/bowl
  2. add cranberry and pecan seeds
  3. add sliced apples (I prefer mine thinly sliced or chopped in small sizes)
  4. sprinkle goat cheese on top
  5. add dressing (I get all my ingredients from Trader Joe’s)
