Option #1

Ingredients

  • Whole Tilapia
  • Garlic Cloves
  • Black Pepper
  • 1/2 Canola Oil
  • 1 tsp Suya Pepper (optional)
  • 1 Tomato
  • 2 Bell Peppers
  • ½ Onion
  • 1 Habanero (optional)

Instructions

  1. Wash Fish
  2. Dry with paper towel
  3. Make deep incisions so that seasoning goes inside
  4. Marinate the fish with seasoning
  5. Wrap fish in aluminum foil
  6. Preheat oven to 375 degrees
  7. Cook for 15 mins
  8. If there is water, pour out and place back in oven
  9. Broil both sides for 3-5 mins each

Pepper Sauce

  1. Heat oil on low heat
  2. Add 1/3 cup of diced onions
  3. Cook until brown
  4. Add blended pepper
  5. Season to taste (knorr maggi + salt)
  6. Cook for 10-15 mins on medium heat

Serving
Jasmine Rice + Fried Plantain + Fish


Option #2

Ingredients
Same as option #1 with more additions

  • Ginger
  • Thyme
  • Curry Powder

Instructions

  1. Wash Fish
  2. Dry with paper towel
  3. Make deep incisions so that seasoning goes inside
  4. Blend pepper
  5. Season fish with blended pepper
  6. Wrap fish in aluminum foil
  7. Preheat oven to 375 degrees
  8. Cook for 15 mins
  9. If there is water, pour out and place back in oven
  10. Broil both sides for 3-5 mins each

Blended Pepper

  1. 2 Habanero Peppers (optional)
  2. 1 Bell Pepper
  3. 3/4 Onion
  4. Gloves of Garlic

Serving: Fried Plantain + Tilapia

Same as option one only difference is that you would season the fish with the blended pepper
